Don’t we all love Gingerbread men? Now there’s more reason than ever to love them – here are my favourite Gingerbread men cookies with no added sugar. No artificial sweeteners. Sweetened only with dates. What’s more, these are gluten free as well! What’s not to love? Now, no excuses. Get baking right away 😉

Did I mention they’re crumbly and delicious? And guilt-free at the same time?

Makes 16 cookies

Ingredients 

  • 275 g ground almonds
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon ground ginger
  • ½ teaspoon baking powder
  • 5 medjool dates
  • 50 g salted butter at room temperature or soft coconut oil
  • 4 tablespoons non dairy milk

Instructions

  1. Preheat the oven to 160°C
  2. In a food processor blend all the ingredients until you get a homogeneous consistency
  3. Form a disc, cover with plastic wrap and let set in the fridge for 1 hour
  4. Roll out the dough between two baking paper sheets to a 50 mm thickness
  5. Using a cookie cutter, cut out shapes and place them on a baking sheet. Repeat with the remaining dough
  6. Cook the cookies for 15 minutes and let cool before serving
