Healthy Holiday Dessert – Refined sugar-free Linzer Cookies

The first time I was tasted Linzer cookies in Austria, I was in love. I knew I had to make them at home and when I bake something, I must find a healthier way to do it. So here’s my efforts to making a healthier version of the very popular Christmasy holiday dessert – Linzer cookies. They taste wonderful (though not quite as rich as the original recipe calls for) but that’s okay since we’re looking for a healthier alternative. This healthier version sure is delicious enough to serve to your guests and your own family this holiday season.

Ingredients 

  • 275 g Almond flour (ground almonds)
  • ½ teaspoon baking powder
  • 5 medjool dates
  • 50 g salted butter at room temperature or soft coconut oil
  • 4 tablespoons non dairy milk
  • 2 tablespoons chia seeds
  • 2 cups frozen berries
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 160°C
  2. In a food processor blend the almond flour, baking powder, dates, butter or coconut oil and milk until you get a homogeneous consistency
  3. Form a disc, cover with plastic wrap and let set in the fridge for 1 hour
  4. Roll out the dough between two baking paper sheets to a 30 mm thickness
  5. Using a cookie cutter, cut out shapes and place them on a baking sheet. Repeat with the remaining dough. For half of the cookies, cut out a shape in the center.
  6. Cook the cookies for 15 minutes and let cool before assembling.
  7. In a small saucepan over medium heat, cook the fruits until they get bubbly and soft. Blend the fruits for a smooth consistency. Add the chia seeds and lemon juice remove from the heat and let cool before using.
  8. Place a teaspoon of jam add the center of a cookie and add the cut out cookie on top.
