Holiday Healthy Dessert Recipe – Vegan Chocolate Mousse

This one you’ve got to taste! Absolutely delightful chocolate mousse that’s vegan and the only sugar in it is from the melted dark chocolate so you adjust the sweetness accordingly. Delightful but not sinful 😉

The recipe serves 6 but it’s such a hot favourite in my household that it just serves 2 ;). Without further ado, let’s get started!

Ingredients

  • 2 5-ounce cans coconut milk, chilled
  • 200 g dark chocolate
  • 125 ml aquafaba (the liquid strained from can chickpeas)
  • ½ teaspoon lemon juice
  • A pinch of Sea salt

Instructions

  1. Open both cans of coconut milk and poke a hole into the cream with a knife, going down to the bottom of each can. Drain off the separated coconut water and reserve 2 tablespoons. Put the rest into your next smoothie!
  2. Heat the chocolate, 2 tablespoons of coconut cream, and 2 tablespoons of the separated coconut liquid in a bain marie (a medium heatproof bowl set over a small saucepan of barely simmering water), stirring occasionally, until melted and smooth. Chill remaining solid coconut cream until ready to serve
  3. Beat aquafaba, lemon juice, and a pinch of salt in a bowl using an electric mixer on medium-high speed until stiff peaks form and the mixture is tripled in volume, 7–8 minutes
  4. Using a rubber spatula, gently fold about one-quarter of whipped aquafaba into chocolate mixture until incorporated. Fold in remaining whipped aquafaba in 3 more additions until incorporated and no streaks remain
  5. Divide the mousse among ramekins and chill until set, at least 2 hours
  6. Using an electric mixer on medium-high speed, beat the reserved chilled coconut cream, and a pinch of salt in a medium chilled bowl until soft peaks form 3–4 minutes
  7. Dollop the mousse with the whipped coconut cream and some grated chocolate
