Very Fudgy Vegan Chocolate cake

This Super Fudgy Vegan Chocolate cake is a Health nerd’s delight! It tastes amazing, is vegan and best of all, it’s super healthy! That doesn’t mean someone who isn’t into healthy desserts won’t enjoy it. This fudgy vegan chocolate cake is for everyone, vegan or not.

Why the Fugdy vegan chocolate cake is so healthy:

  1. Made with black beans, so it’s full of protein.
  2. Healthy fat from avocado
  3. No refined sugar (except in the melted chocolate, the sweetness of which you can control)

Ingredients

For the cake

  1. 500 g of black beans rinsed
  2. 2 tablespoons ground flax seeds
  3. 6 tablespoons cold water
  4. 30 g melted chocolate (I use at least 85% dark chocolate to minimize the amount of added sugar)
  5. 15 g cacao powder (I like the taste of dutch processed cacao powder)
  6. 1 teaspoon baking powder
  7. 2 tablespoons of applesauce
  8. A pinch of salt

For the frosting

  1. 1 avocado
  2. 20 g dark chocolate (I prefer a minimum of 85% dark chocolate)
  3. 15 g cacao powder
  4. 1 teaspoon vanilla extract
  5. 30 ml almond milk
  6. A pinch of salt

Instructions

  1. Preheat the oven to 180°C
  2. Mix together flax seeds and cold water and let set for 10 minutes
  3. In a food processor, combine the black beans, the apple sauce and the flax “eggs”, mix until smooth
  4. Add cacao powder, baking powder and salt. Blend until smooth
  5. Transfer to a round baking pan and cook 35 minutes.
  6. Let cool before frosting.
  7. Prepare the frosting by melting the chocolate in a bain marie (a medium heatproof bowl set over a small saucepan of barely simmering water)
  8. Mix all the ingredients together in a food processor and let set 15 to 20 minutes in the fridge before using.
  9. Decorate the cake using a piping bag or a spatula.
